A One Dish Meal for a Frigid Night

cold-weather2-jpgGoing to freeze our bazingas off tonight, low of 2 with -10 to -20 windchill.

I had some veggies looking poorly in the bins. That’s always a good time to gather all the poor mites, chop them into bite-sized pieces, and stir fry—and put the lot over Basmati rice, of course.

Tonight’s One Pan Wonder is Tikka Marsala with Creamy Tomato

EVOO
2 links chicken sausage
2 skinless/boneless thin cut chicken breasts
Button mushrooms
1 carrot
2 green peppers
½ white onion
Cherry tomatoes
Sea salt, pinch
Cracked pepper, pinch
1 Jar Sharwood’s Tikka Marsala Creamy Tomato sauce (with coconut and a hint of Black Cardamom)
1 cup Basmati rice, prepared

Fry the sausage and chicken in EVOO until browned, remove to plate
In the EVOO stir fry all the vegetables with salt & pepper until the onion is transparent
Add the sausage & chicken, heat through
Add ½ jar of the Tikka Marsala sauce and heat through
Place cooked rice in large serving dish with stir fry on top

Good eats.
