Woohoo, we are getting another wintry blast, and this time we have the full banquet: accumulating snow, sleet, freezing rain, then warming up and heavy rain to the tune of 1.5″. Yay us.
We’re in a heavy snow band right now.
I tried one of the new functions on my iPhone 6s, Slo Mo (very cool), but the upload time is forever and a day so you’ll have to take my word for it (grrr).
What’s the best way to handle crappy weather?
How about making a big pot of cream of cauliflower soup?
1 head of cauliflower broken into florets
2 medium cooking onions, rough chop
4-5 stalks of celery with tops chopped 1″ dice
1 large can chicken stock
couple pinches of sea salt (stock already has a lot of salt so go easy)
1-2 tsp cracked pepper
ground garlic, several twists
1-2 tsp cumin
Slow cook 3.5-4 hrs, let cool then process with blender
Add a pint of 1/2 & 1/2, warm & adjust seasonings to taste
The house smells absolutely divine!
Let it snow, let it snow, let it sleet and rain…
